Meet Miriam Wilson.


In this interview, Mark created Miriam Wilson's fantasy cultural year from the answers to some easy questions to which there were no wrong answers.
Mark had a magic wand and a time machine at his disposal, so expect some surprises, laughs, anecdotes and conversational detours.

"Can a Michelin-starred meal become a work of fine art?"

Most people admire a fine dish for only a few fleeting moments before it disappears forever. Miriam Wilson sees something different. She sees works of art that can last.


That simple observation became the inspiration behind ROSC ART, a unique artistic practice that transforms the creations of the World's leading chefs into striking abstract artworks, giving permanence to one of the world's most ephemeral creative disciplines.


Born in Ireland and now based in Luxembourg, Miriam spent four decades building a successful international career in finance and entrepreneurship before returning to the passion that had inspired her as a child: art.


Creativity had always accompanied her professional life, but retirement gave her the opportunity to pursue an entirely new vision.


The idea came while dining at a three-Michelin-star restaurant.


As each beautifully presented dish arrived, Miriam found herself thinking, "This is a work of art." Yet unlike a painting or sculpture, it would exist for only a few moments before becoming nothing more than a memory. She began asking herself a simple question: could these extraordinary creations be reimagined as lasting works of fine art? 


Since 2024, she has worked with acclaimed chefs across Europe, photographing their signature dishes before transforming them into bold abstract compositions. Rather than simply reproducing the food, her artworks capture its atmosphere, movement, colour and emotional impact, creating a new visual interpretation of the original culinary experience.


The fleeting fine cuisine and the lasting fine art ...



The name ROSC comes from Old Irish and was famously associated with Ireland's influential ROSC exhibitions, where it was interpreted as "The Poetry of Vision." It perfectly reflects Miriam's ambition to encourage people to see artistry where they might never have expected to find it.


Listening to Miriam speak, it becomes clear that her work is about far more than abstract art. It is about challenging how we define creativity itself.


The world's finest chefs compose with colour, texture, balance and emotion just as painters compose with pigment and canvas. Through ROSC ART, Miriam brings these two creative worlds together, inviting us to view exceptional cuisine not simply as food, but as an art form worthy of preservation.


In doing so, she has created something genuinely original.


Not just a distinctive artistic style, but a new conversation about where art begins—and where it can be found.

It begins in Paris ... where else?


Seated on the terrace of a quiet Left Bank café overlooking the Seine, Miriam enjoys a perfectly chilled glass of Sancerre while reading The Art of Eating by M.F.K. Fisher. Soft jazz drifts through the evening air as she reflects on the relationship between food, memory and creativity.


Then comes an extraordinary invitation ...


A fictitious international foundation dedicated to celebrating culinary excellence has discovered ROSC ART and commissions Miriam to create a landmark collection interpreting the work of twenty of the world's most celebrated Michelin-starred chefs.


The project includes unrestricted travel, behind-the-scenes access to some of the world's greatest kitchens, an international touring exhibition, a beautifully illustrated book and a documentary exploring the artistry of fine dining.


Her first destination is San Sebastián, where she spends time with pioneering chefs whose creativity transformed modern gastronomy. Watching every dish take shape, Miriam captures not simply the food itself but the emotion, rhythm and craftsmanship behind its creation before reimagining each experience as a striking abstract artwork.


From Spain she travels to Kyoto, discovering the elegance, precision and centuries-old traditions of Japanese cuisine. Here she finds beauty in simplicity, learning how restraint can be every bit as expressive as complexity.


The journey continues to Copenhagen, where sustainability, nature and innovation redefine fine dining, before leading her to Lima, where Peru's extraordinary culinary heritage inspires a vibrant new series of works celebrating colour, flavour and cultural identity.


Returning to London, Miriam enjoys a week immersed in the arts, attending a concert by Ludovico Einaudi, whose atmospheric compositions mirror the emotional qualities she seeks in her own work.


An evening at the Royal Opera House is followed by a visit to the Royal Academy Summer Exhibition, where contemporary artists continue to challenge conventional ideas about creativity.


For her Fantasy Lunch, Miriam chooses Ferran Adrià, the visionary chef who transformed the way the world thinks about cuisine. He, in turn, invites Salvador Dalí, whose surreal imagination and fascination with food create the perfect companion for a conversation about creativity, innovation and why art can be found in the most unexpected places.


As the year draws to a close, one thought remains. A great meal may last only an evening.

But the artistry behind it deserves to be remembered forever.
